500 gm low fat ricotta
3 egg whites
3 tablespoons rice flour
1/3 cup sugar
1/2 cup of passionfruit pulp
preheat oven to 160 C
put everything but the passionfruit into food processor and give it a good blast.
stir in the passionfruit
spoon into a 12 x 1/2 cup muffin tin, if its not non stick, give it a quick squirt with oil spray
cook for about 30 minutes,
leave to cool a bit in the tray and try not to eat them too hot, better if cooled and served with some yoghurt and strawberries/whippy cream and strawberries
there is no crust
