Leek and Potato Soup 30 minutes
Peel 4 medium sized potatoes , slice thickly and cover with hot water
and set to boil. Add one stock cube, doesn't matter chicken, beef or
Vegeta.
Meanwhile, trim one leek, rinse all the edible bits, shred, and simmer gently
in melted margarine (or butter if on hand). Don't let it go brown, three minutes
with stirring should do it.
Add the leek to the boiling spuds. Test for potatoes being cooked, when they
are done, take off the heat and blend with hand blender.
Can chop some parsley and add before blending, makes a pretty flecked
soup. Keep heat gentle for best fragrant result.
