Vegie Muffins

Vegie Muffins Serves 15-18 prep 45mins
2 1/2 cups self-raising flour (works well with whole meal flour)
1 cup sugar
1 1/4 cups milk
2 eggs, lightly beaten
125g butter, melted
1 small zucchini - grated
1 small carrot - grated
1. Preheat the oven to 180oc (160oc for fan forced). Line 2 muffin trays with paper cases. Sift the flour (I don't bother if using whole meal) and add sugar give it a mix through
2. Make a well in the centre and add milk, eggs and butter. Mix until just blended. Stir through grated vegetables.
3. Divide equally between the paper cases.* They don't rise that much so if you use 15 paper cases they will be quite full. Bake for 20-25 mins, until golden brown. Serve muffins warm or freeze for later use.
