Mini cheese cakes
Use a muffin tin with muffin sized paper patty pans (medium or large) and place a
ginger biscuit or chocolate ripple biscuit at the bottom of each.
250 grams cream cheese at room temp - very important
half cup caster sugar
half tsp vanilla
one tblsp lemon juice (or third cup sour cream but I didn't take that option!)
beat till light and creamy then add two eggs one at a time.
Place a rounded tablespoon of mixture on top of each biscuit.
Cook at 180C for approx 20 mins till lightly brown and risen slightly/ slight cracks across top.
Cool in tins then chill
Makes 12.
Serve as is or top with artistically sliced strawberries or raspberries or blueberries, kiwi fruit or even
mandarin segments would be good.

Mmmmmmmmmm sounds good.
I had to make cheesecake for Brendan, but made an old recipe
non-baked.
500 grm cream cheese ( philly) room temp
1 tin Nestles condensed milk ( think 350)
1/4 cup lemon juice
1 teas vanilla escence.
Base made from McVities digestives and melted butter ( I had to guess)
Blend all above and pour on base. Refridgerate until set.
